Victoria Sponge cake |
Ingredients: 2 eggs 100g/4oz caster (soft white) sugar 100g/4oz self raising flour 100g/4oz margarine |
Method: | |
1. | Whisk the margarine and sugar together until light & creamy in texture. |
2. | Whisk the eggs, and mix into the mixture slowly, whisking all the time. |
3. | Gently fold in the flour, making sure not to knock the air out of the cake mixture. |
4. | Place mixture into a greased 7" cake tin or two 7" sandwich tins, and bake in moderate oven (325-350; Gas mark 3-4) 25-30 mins. in two tins, 40-45 mins. in one tin. |
5. | When cooked, leave to cool, and then, if only one has been made, split the cake and fill with jam and/or cream. |
